Cook the Pasta: Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
Prepare the Pea Sauce: In a large skillet, heat the olive oil over medium heat. Add the shallot and garlic; sauté until fragrant and translucent, about 2-3 minutes.
Add the Peas: Stir in the peas and sauté for another 2-3 minutes. If using fresh peas, cook until tender.
Blend the Sauce: Transfer the mixture to a blender or food processor. Add the vegetable broth, lemon juice, fresh basil, salt, and nutritional yeast (if using). Blend until smooth and creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
Combine: In the same skillet, add the cooked pasta to the pea sauce. Toss gently to coat evenly. If the sauce is too thick, add a bit more reserved pasta water to loosen it up.
Season: Taste and season with additional salt, pepper, and red pepper flakes if desired.
Serve: Plate the pasta and garnish with extra fresh basil and a drizzle of olive oil. Enjoy your dish warm!
