Creamy Sweet Potato Carrot and Broccoli Soup

This comforting creamy soup is perfect for warming up and soothing your little one. Packed with the goodness of sweet potatoes, carrots, and broccoli, it's both nutritious and delicious.

- 2 medium sweet potatoes, peeled and diced
- 2 large carrots, peeled and sliced
- 1 crown of broccoli, chopped into florets
- 1 medium onion, diced
- 2 shallots, diced
- 3 cloves of garlic, minced
- 4 cups vegetable broth (low sodium)
- 1 can (13.5 oz) coconut cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: Fresh herbs (like parsley) or a sprinkle of nutritional yeast for additional flavor

Instructions:
- Heat the olive oil in a large pot over medium heat. Add the diced onion and shallots, and sauté until they become translucent, about 4-5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced sweet potatoes and sliced carrots, and cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the sweet potatoes and carrots are tender.
- Add the broccoli florets to the pot and simmer for an additional 5 minutes.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer it to a blender in batches.
- Stir in the coconut cream and season with salt and pepper to taste.
- If desired, top with fresh herbs or nutritional yeast before serving.
