Heat the oven to 400°F. Scrub the sweet potatoes, pierce them several times, and bake on a lined sheet for 40–45 minutes, until tender.
Let the potatoes cool slightly. Slice them lengthwise and carefully scoop the flesh into a bowl, leaving a ¼-inch shell.
Meanwhile, warm the olive oil in a skillet over medium heat. Add the onion and cook for 3 minutes.
Add the turkey, garlic, thyme, paprika, pepper, and salt. Cook for 6–8 minutes, breaking up the meat, until no longer pink.
Stir in the spinach and cook until wilted. Remove from the heat.
Mash the sweet potato flesh with the Greek yogurt. Fold in the turkey mixture and half of the cheese.
Spoon the filling into the potato shells. Sprinkle with the remaining cheese.
Bake for 10–12 minutes, until hot and lightly browned. Garnish with parsley before serving.
