Ingredients
- 4 bell peppers (any color), sliced in half and seeds removed (GI: 15)
- 1 lb ground turkey (GI: 0)
- 1 tbsp olive oil
- 1 onion, chopped (GI: 10)
- 2 garlic cloves, minced
- 1 can of black beans, drained and rinsed (GI: 30)
- 1 cup cooked quinoa (GI: 53)
- 1 cup salsa (GI: 55)

Cooking Instructions
- Preheat the oven to 375°F.
- Place the halved peppers on a baking tray and set aside.
