Oat Flour Jam Biscuits with Mixed Berry Jam

Ingredients
- 200g oat flour
- 80g oil (such as coconut oil or vegetable oil)
- 80g honey (or maple syrup)
- 20g chia seeds
- 60g Greek yogurt
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Mixed berry jam (approx. 1/2 cup)
Cooking Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the oat flour, chia seeds, baking powder, and salt. Mix well to ensure they are evenly distributed.
- Add the oil, honey, and Greek yogurt to the dry ingredients. Stir until a dough forms. If the dough feels too dry, you can add a splash of milk or water to bring it together.
- Take approximately one heaping tablespoon of dough and roll it into a smooth ball between your palms. Place the ball on the prepared baking sheet and gently press down with your thumb to create an indentation in the center.
- Repeat this process with the remaining dough, spacing the biscuits about 2 inches apart.
- Fill each indentation with a small spoonful of mixed berry jam. Be careful not to overfill as the jam may spill over during baking.
- Bake the biscuits in the preheated oven for 12-15 minutes, or until they are lightly golden around the edges.
- Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, these jam-filled oat biscuits are ready to be enjoyed. Serve them as a tasty treat with a cup of tea or coffee.
