Ingredients
Instructions
- 1
Heat skillet over medium-high heat and add 1 tbsp olive oil. Season chicken with salt, pepper, half the smoked paprika and half the cumin.
- 2
Sear chicken in a single layer 3–4 minutes per side until golden (it will finish cooking later). Remove to a plate.
- 3
Add remaining 1 tbsp oil to skillet. Sauté onion 3 minutes until translucent, add garlic and cook 30 seconds.
- 4
Stir in diced tomatoes, chickpeas, remaining smoked paprika, cumin, chili powder (if using), oregano, and a pinch of salt and pepper. Bring to a gentle simmer.
- 5
Return chicken to skillet, nestling pieces into sauce. Cover and simmer 6–8 minutes until chicken is cooked through (internal temp 165°F / 74°C) and flavors meld.
- 6
Stir in spinach until wilted (1–2 minutes). Finish with lemon juice or vinegar and adjust salt/pepper.
- 7
Serve hot — with rice, quinoa, crusty bread, or straight from the skillet for fewer carbs. Top with parsley or feta if desired.
Backstory: This is a no-fuss, high-protein skillet that blasts hunger and builds strength. Pantry staples, minimal fuss, maximum gains — just how I like it.
