Spiced Channa Dal Curry

Ingredients:
- 1 cup channa dal (split chickpeas), soaked and drained
- 1 large onion, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons oil
- 2 tomatoes, pureed
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro, for garnish
Instructions:
- Heat oil in a large pan or pot over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic and grated ginger to the pan and sauté for another minute.
- Add the channa dal to the pan and mix well with the onion-ginger-garlic mixture.
- Now, add the tomato puree and stir everything together. Allow it to cook for a couple of minutes.
- Add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the dal and onions with the spices.
- Pour enough water into the pan to cover the dal, around 3 cups. Bring it to a boil, then reduce the heat to low and cover the pan with a lid. Let it simmer for about 30-40 minutes, or until the channa dal is fully cooked and tender.
- Once the dal is cooked, sprinkle garam masala over it and give it a stir.
- Taste and adjust the seasoning if needed. Feel free to add more water if you prefer a thinner consistency.
- Garnish with fresh cilantro and remove from heat.
- Serve the Spiced Channa Dal Curry with steamed rice or warm roti. Enjoy!
