These savory zucchini fritters are packed with flavor and served with a cool tzatziki sauce. They make for a fantastic brunch dish that's low in carbohydrates and has a low glycemic index.

Zucchini Fritters
- 2 medium zucchini (GI: 15, Carbs: 12g)

- 1/2 teaspoon salt

Tzatziki Sauce
- 1 cup Greek yogurt (GI: 0, Carbs: 6g)
- 1/2 cucumber, grated (GI: 15, Carbs: 2g)
- 1 clove garlic, minced
- 1 tablespoon olive oil (GI: 0, Carbs: 0g)
- 1 tablespoon lemon juice (GI: 0, Carbs: 1g)
- Fresh dill, chopped (to taste)
Cooking Instructions:
- Prepare the Zucchini: Grate the zucchini and place it in a clean dish towel, squeezing out excess moisture.
- Mix Ingredients: In a mixing bowl, combine the drained zucchini, egg, almond flour, Parmesan cheese, garlic powder, onion powder, pepper, and salt. Mix until well combined.
- Cook the Fritters: In a skillet, heat 2 tablespoons of olive oil over medium heat. Scoop 2 tablespoons of the mixture and flatten them into patties. Fry for about 3-4 minutes on each side until golden brown. Repeat with the leftover mixture.
- Make the Tzatziki: In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and dill. Mix well and season with salt to taste.
- Serve: Plate the zucchini fritters with a side of tzatziki for dipping.
