Carbonada is a classic Chilean dish that combines tender meat with a variety of vegetables and flavors. Traditionally, it is a hearty stew; in this version, we’ll make it less liquid and more focused on the robust flavors of the ingredients.
Ingredients
- 500g of lean beef (chuck or brisket), cut into cubes
- 2 medium onions, diced
- 2 cloves of garlic, minced
- 2 medium carrots, diced
- 1 medium potato, diced (or you can use sweet potato for a healthier twist)
- 1 bell pepper, diced (any color you prefer)
- 1 cup of green beans, trimmed and cut into pieces
- 1 cup of corn kernels (fresh or frozen)
- 1 tablespoon of paprika
- 1 teaspoon of cumin
- 1 bay leaf
- Salt and pepper to taste
- 4 cups of low-sodium beef broth or vegetable broth
- Olive oil for sautéing
- Fresh parsley, chopped (for garnish)
Cooking Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the diced onions and garlic, sautéing until they become translucent.
- Add the beef cubes, cooking until browned on all sides.
- Sprinkle in the paprika, cumin, salt, and pepper, stirring well to coat the meat evenly.
- Add the carrots, potato, bell pepper, green beans, and corn to the pot.
- Pour in the broth and add the bay leaf. Bring to a simmer.
- Cover and let it cook for about 30-40 minutes, stirring occasionally, until the meat is tender and the vegetables are cooked through. The liquid should reduce significantly, resulting in a thick stew.
- Remove the bay leaf and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
