This vibrant and spicy stir-fry is not only quick to prepare but also full of flavor and nutrition. It’s perfect for a weeknight dinner or a satisfying lunch!
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil (or coconut oil)
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced (any color)
- 1 zucchini, sliced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon lime juice
- Fresh cilantro, for garnish
- Cooked rice or quinoa, for serving
Instructions
- Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat.
- Sauté Onions & Garlic: Add the sliced onions and minced garlic. Cook for about 2 minutes until they are fragrant and the onions begin to soften.
- Add Vegetables: Stir in the bell pepper and zucchini. Sauté for another 3-4 minutes until the vegetables are tender-crisp.
- Spice it Up: Add the chickpeas, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to coat everything in the spices. Cook for an additional 3-5 minutes until the chickpeas are heated through.
- Add Flavors: Pour in the soy sauce and lime juice, stirring to combine. Allow to cook for another minute.
- Serve: Remove from heat and garnish with fresh cilantro. Serve hot over cooked rice or quinoa.
