Spicy Lentil Stew

This hearty yet simple spicy lentil stew is perfect for spooning over creamy mashed potatoes. Packed with protein and flavor, it warms you up while keeping it wholesome and satisfying.
Ingredients
- 1 cup green or brown lentils, rinsed and drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes (with juices)
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Salt, to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Stir in the cumin, smoked paprika, chili powder, and black pepper. Cook for an additional minute to toast the spices.
- Add the rinsed lentils, diced tomatoes (with juices), and vegetable broth. Bring to a boil, then reduce to a simmer.
- Cover and let simmer for about 25-30 minutes, or until the lentils are tender. Add salt to taste.
- Serve hot over a generous scoop of mashed potatoes and garnish with freshly chopped parsley or cilantro if desired.
