Spicy Vegan Baked Ziti with Beyond Meat Sausage

Ingredients:
- 1 lb ziti pasta
- 1 package Beyond Meat Sausage, crumbled
- 1 jar of your favorite marinara sauce
- 1 cup Miyoko's liquid mozzarella
- 1 red bell pepper, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tsp red pepper flakes (adjust to taste)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:

Preheat the oven to 375°F (190°C). Cook the ziti pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat some oil over medium heat. Add the diced onion and red bell pepper. Sauté until onions are translucent.

Add the crumbled Beyond Meat Sausage to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Stir in the minced garlic, red pepper flakes, dried oregano, and dried basil. Cook for another minute until fragrant.

Pour in the marinara sauce and stir to combine. Let the mixture simmer for about 5 minutes.

Add the cooked ziti pasta to the skillet and toss to coat the pasta with the sauce.

Pour half of the ziti mixture into a baking dish. Drizzle half of Miyoko's liquid mozzarella over the ziti. Add the remaining ziti on top and finish with another drizzle of Miyoko's liquid mozzarella.

Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top is bubbly and lightly golden.
