Vegan Tacos Recipe

Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can black beans, drained and rinsed
- 2 tbsp taco seasoning
- Salt and pepper, to taste
- Corn or flour tortillas
- Toppings of your choice: shredded lettuce, diced tomatoes, sliced avocado, salsa, vegan sour cream, etc.
Directions:
- Heat oil in a large skillet over medium heat. Add onion and garlic and cook until soft and fragrant, about 5 minutes.
- Add the bell pepper and zucchini and continue to cook until the vegetables are tender, about 10 minutes.
- Add the black beans and taco seasoning, and stir until well combined. Cook for an additional 5-7 minutes, or until the beans are heated through.
- Season with salt and pepper to taste.
- Warm the tortillas according to their package instructions.
- Build the tacos by filling each tortilla with the vegetable and bean mixture.
- Top with your favorite toppings, such as shredded lettuce, diced tomatoes, sliced avocado, salsa, or vegan sour cream.
- Serve hot and enjoy!
