Ingredients
Instructions
- 1
Preheat oven to 200°C (400°F). Line a baking sheet with parchment.
- 2
Peel plantains and slice on the diagonal into 1–1.5 cm (about 1/2 inch) thick pieces.
- 3
In a bowl, mix melted coconut oil, maple syrup, cinnamon, nutmeg, salt, vanilla, and lime juice if using.
- 4
Toss plantain slices gently to coat evenly. Arrange in a single layer on the prepared sheet, cut side up so they caramelize nicely.
- 5
Bake 12–18 minutes until golden and sticky, flipping once halfway for even caramelization (watch closely — oven times vary).
- 6
Optional: in the last 3 minutes, sprinkle shredded coconut or chopped nuts and return to oven to toast.
- 7
Remove and let rest 2 minutes. Serve warm — excellent with vegan yogurt, coconut cream, or a scoop of vegan ice cream.
Backstory: A simple, caramelized baked plantain dessert popular in Surinamese and Caribbean-inspired kitchens — naturally sweet, tender inside with a sticky caramelized exterior.
