- 1 lb (450 g) beef or chicken, cut into pieces
- 4 cups water or beef/chicken broth
- 2 medium potatoes, peeled and quartered
- 1 large carrot, sliced
- 1 cup green beans, trimmed
- 1 cup pumpkin or squash, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 2 sprigs fresh oregano (or 1 teaspoon dried oregano)
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Cooking Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the beef or chicken pieces to the pot. Brown the meat on all sides.
- Pour in the water or broth and bring to a boil. Skim any foam that rises to the surface.
- Stir in the paprika, cumin, and oregano. Season with salt and pepper, and then reduce the heat to a simmer.
- Add the potatoes and carrots to the pot, cooking for about 15 minutes.
- Incorporate the green beans and pumpkin/squash, and continue simmering until the vegetables are tender, about another 15 minutes.
- Taste and adjust seasoning if necessary.
- Serve the cazuela hot, garnished with chopped parsley. Enjoy it with a side of pebre (Chilean salsa) and crusty bread for a complete experience!
