These delicious baked apples are stuffed with a mixture of sweet prunes, chopped walnuts, and almonds, all beautifully spiced with cinnamon. They make for a warming, satisfying dessert that's low in glycemic index and perfect for Type 1 diabetics!
Ingredients
- 4 medium apples (GI: 36, Carbs: 25g each)
- 1 cup pitted prunes (GI: 29, Carbs: 66g)
- 1/2 cup walnuts, chopped (GI: 15, Carbs: 4g)
- 1/2 cup almonds, chopped (GI: 15, Carbs: 6g)
- 1 tsp cinnamon (GI: N/A, Carbs: 0g)
- 2 tbsp arrowroot powder (GI: 65, Carbs: 30g)
- 1 tbsp lemon juice (GI: 10, Carbs: 1g)
- 1 cup water (for baking)
Cooking Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the chopped prunes, walnuts, almonds, arrowroot powder, cinnamon, and lemon juice. Mix until well combined.
- Core the apples, creating holes in the center to fill with the mixture.
- Stuff each apple with the prune and nut mixture, pressing it down gently.
- Place the stuffed apples in a baking dish, and pour water into the bottom of the dish to prevent burning.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the apples are tender.
