Garlic and Herb Crusted Tofu

Ingredients:
- 1 block of firm tofu, drained and pressed
- 2 tablespoons nutritional yeast
- 2 tablespoons breadcrumbs (use gluten-free breadcrumbs if desired)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions:
- Preheat your oven to 375°F (190°C).
- Slice the pressed tofu into rectangular pieces, about 1/2-inch thick.
- In a shallow bowl, combine the nutritional yeast, breadcrumbs, chopped parsley, dried thyme, dried oregano, garlic powder, onion powder, salt, and black pepper. Mix well.
- Dip each tofu slice into the breadcrumb mixture, pressing firmly to coat all sides evenly. Repeat for all the tofu slices.
- Heat the olive oil in a large skillet over medium heat. Once the oil is hot, place the coated tofu slices in the skillet and cook for about 2-3 minutes per side, or until golden and crispy.
- Transfer the tofu slices to a baking sheet lined with parchment paper.
- Place the baking sheet in the preheated oven and bake for an additional 10-12 minutes, or until the tofu is heated through and the crust is nicely golden.
- Once baked, remove the tofu from the oven and let it cool for a few minutes before serving.
