GlutenFree and SugarFree Peppermint Chocolate Truffles

Ingredients:
- 1 cup dairy-free dark chocolate chips
- 1/2 cup coconut cream
- 2 tsp peppermint extract
- 1/4 cup unsweetened cocoa powder
- Crushed candy canes (optional, for decoration)
Instructions:
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until fully melted and smooth.
- Add coconut cream and peppermint extract to the melted chocolate, and mix well until fully combined.
- Place the mixture in the refrigerator for about 1-2 hours until it becomes firm.
- Using a teaspoon or a melon baller, scoop out small portions of the mixture and roll them into balls. If the mixture becomes too soft, refrigerate it for a few more minutes before continuing.
- Roll each truffle in cocoa powder until fully coated. You can also sprinkle crushed candy canes on top for decoration if desired.
- Place the truffles on a parchment-lined tray and refrigerate for another 30 minutes to set.
- Once set, the truffles are ready to be enjoyed! Store them in an airtight container in the refrigerator for up to 1 week.
