Savory Asian Vegetable Fritters

These delightful fritters are a crispy and veggie-packed treat, perfect for an appetizer or a light meal. They combine the earthy sweetness of sweet potatoes and squash with vibrant greens for a satisfying crunch.
Ingredients
- 1 cup camote (sweet potato), grated
- 1 cup kalabasa (squash), grated
- 1 cup carrots, grated
- 1 cup mung bean sprouts
- 1 cup malunggay (moringa) leaves, chopped
- 1 cup kangkong (water spinach) leaves, chopped
- 1 cup all-purpose flour
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1 cup water (adjust for batter consistency)
- Oil for frying (enough for shallow frying)
Cooking Instructions
- In a large mixing bowl, combine the grated camote, kalabasa, and carrots.
- Add the mung bean sprouts, chopped malunggay, and kangkong leaves into the bowl. Mix everything thoroughly.
- Gradually sprinkle in the all-purpose flour, salt, and black pepper. Mix to evenly coat the vegetables.
- Slowly pour in the water while stirring until you achieve a thick batter consistency. It should be wet enough to hold together, but not runny.
- Heat oil in a deep pan over medium heat. You’ll want about 1/2 inch of oil for shallow frying.
- Once the oil is hot, scoop about 2-3 tablespoons of batter per fritter and gently flatten it in the oil. Make sure not to overcrowd the pan.
- Fry each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat to avoid burning.
- Remove the fritters and let them drain on paper towels to remove excess oil.
- Serve hot with your favorite dipping sauce or enjoy them plain!
