Vegan Broccoli Enchiladas

Introduction:
These Vegan Broccoli Enchiladas are a delightful twist on traditional enchiladas, filled with a flavorful mix of broccoli, black beans, corn, and vegan cheese, all wrapped in soft corn tortillas and smothered with a smoky enchilada sauce. Baked to perfection, these enchiladas are sure to satisfy your Mexican food cravings!
Ingredients:
- 1 head of broccoli, cut into small florets
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels (fresh, canned, or frozen)
- 1 cup of vegan cheese, shredded (choose your favorite melty variety)
- 8-10 corn tortillas
- 1 ½ cups of enchilada sauce
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)
- Lime wedges, for serving
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté the broccoli florets until slightly tender, about 5-7 minutes.
- Add the black beans, corn, cumin, chili powder, salt, and pepper to the skillet. Cook for another 2-3 minutes, stirring occasionally.
- Warm the corn tortillas to make them pliable.
- Take a tortilla, spoon some of the broccoli mixture onto it, sprinkle with vegan cheese, and roll it up. Place it seam side down in a baking dish. Repeat with the remaining tortillas and filling.
- Pour the enchilada sauce over the rolled tortillas, ensuring they are all coated.
- Sprinkle any remaining vegan cheese on top of the enchiladas.
- Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the enchiladas are heated through.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro, if desired, and serve with lime wedges for squeezing over the enchiladas.
