Ingredients:
- 4 medium zucchinis, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth

- 2 tablespoons nutritional yeast
- 1 can (13.5 oz) coconut milk (full-fat for a creamier texture)
- Juice of 1 lemon
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh basil, for garnish (optional)
Instructions:

Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, then sauté until softened and fragrant.
