Instrucciones
- 1
Wash a glass jar thoroughly with hot soapy water and rinse well. Add the apples, water, sugar, and vinegar. Stir until the sugar dissolves.
- 2
Keep the apples submerged beneath the liquid using a clean fermentation weight. Cover the jar with a clean cloth or coffee filter and secure it with a band—never seal it airtight during fermentation.
- 3
Store at 18–27°C in a dark place. Stir once daily with a clean utensil for the first 7–10 days. A little fizz is normal; fuzzy mold, foul odors, or pink, black, or green growth means discard the entire batch.
- 4
After 10–14 days, strain out the apples. Return the liquid to the clean jar, cover it again with cloth, and leave it undisturbed for another 2–4 weeks. Taste only with a clean spoon—never dip used utensils back in.
- 5
When it smells sharply vinegary and tastes acidic, measure the pH with a calibrated meter. For preservation, aim for pH 4.0 or lower; homemade vinegar’s acidity is not guaranteed, so don’t use it for canning or pickling unless acidity has been properly verified.
- 6
Bottle the finished vinegar and refrigerate it. Use within a few months for dressings, sauces, and cooking. If mold or an unpleasant rotten smell develops, discard it.
