Mix the Greek yogurt, lemon juice, Dijon, garlic, salt, and pepper. Chill it while you make the burgers.
In a bowl, combine the chicken, garlic, parsley, paprika, Dijon, Worcestershire sauce, breadcrumbs, salt, and pepper. Mix just until combined — don’t beat it into a paste or the burgers will turn tough.
Divide the mixture into four patties, slightly wider than the buns. Press a shallow dent into the center of each; this stops them puffing up like little hockey pucks.
Heat the olive oil in a nonstick or cast-iron skillet over medium-high heat. Once properly hot, add the patties and cook for 5–6 minutes per side, until deeply golden and the center reaches 74°C.
Toast the buns cut-side down for 1–2 minutes. Build each burger with yogurt sauce, lettuce, chicken, tomato, and red onion.
Rest the patties for 2 minutes before serving so the juices settle rather than flooding your bun.
